Corn Dog Muffins

One more Peighton approved recipe!

The girl loves corn dogs.

She is particularly fond of the mini ones we get from the Schwan truck....but they are kind of expensive!

We found this recipe for Corn Dog Muffins and they are pretty good when we run out of the mini dogs!

Corn Dog Muffins

1 8 1/2 oz package corn bread mix

2 T brown sugar

2 eggs

1 cup milk

1 can corn, drained (Sometimes I leave this out)

5 hot dogs, sliced

Combine mix and sugar, stir in eggs and milk.

Add corn and hot dogs.

Fill greased muffin pans 3/4 full.

Bake at 400 for 18 minutes or until golden brown.

Makes about 20 muffins.
